  3. Cut eggplants into bite size
  4. A pro tip from a farmer on Twitter: Soak eggplants in salty water (1-2% of salt) for 10 mins so that the eggplants won’t absorb oil too much. While waiting for soaking, let’s make the sauce.
  5. If white sesame seeds aren’t toasted nor grounded, you can do that by yourself. This way sesame seeds get more nutty flavour and smells.
  6. Mix all of ingredients in Sauce section. To add garlic and ginger, grate them with grater
  7. Stir fry eggplants with sesame oil with high heat until cooked
  8. Reduce heat to low-medium and then pour the sauce over cooked eggplants and simmer them until the sauce thickens. Don’t simmer too much!
  9. Serve it with your favourite plate
