This is a very healthy, tasty & filling breakfast or brunch recipe. I make these sandwiches regularly with many variations. Just change the vegetables according to your choice and availability. It’s easy and everyone will love it.

  1. 1 packet Wheat or sandwich bread (about 16 slices)
  2. 1/2 cup finely chopped cabbage
  3. 1/2 cup coloured bell peppers or green capsicum
  4. 2 onions finely chopped
  5. 1 big tomato finely chopped
  6. 1 tbspn ginger garlic crushed & chopped fine
  7. 1 - 2 green chillies chopped fine (optional)
  8. 2 tbsp mayonnaise
  9. 1/2 tbsp black pepper powder
  10. 1 tbsp red chilli flakes (optional)
  11. 1/4 tsp turmeric powder
  12. to taste Salt
  13. 1 & 1/2 tbsp Oil
  14. 1 tbsp coriander leaves chopped (optional)
  15. as per taste Butter or ghee for grilling the sandwiches

Steps to make Veg Grilled sandwiches

  1. Take a Kadhai and heat it then put oil in it. When hot add the chopped onion, green chillies & ginger garlic. Sauté well for a few minutes till the raw smell goes off.
  2. Then add the turmeric powder, salt,chopped tomatoes and cook till it gets soft.
  3. Then add in the chopped cabbage, bell peppers or any other vegetable of your choice. Cook them for 3 to 5 minutes, keep stirring it in intervals.
  4. Now turn off the heat let it cool down completely. Add black pepper powder, red chilli flakes, mayonnaise, coriander leaves & mix everything well.
  5. Now take the bread slices, keep them on a plate or board and spread about 1 to 2 tablespoons of this vegetable mixture on the slice and cover it with another bread slice carefully.
  6. Apply butter or ghee on the top of the bread as per your taste. Then grill them well till golden brown from both sides in a sandwich maker / toaster or on a non-stick tawa grill.
  7. Serve hot with ketchup or green chutney of your choice. Enjoy your vegetable sandwich with a hot cup of coffee.
  8. Pl note :- Here you can adjust the spices & vegetables according to your taste. If you do not like mayonnaise you can skip it and use cheese instead. Or you can make the vegetable sandwiches without mayonnaise or cheese also. The vegetables should not be over cooked. There should be a slight crunch in them.
